Spoon bread was a type of very soft bread, a traditional cuisine popular in the southern United States on Earth.
History and specifics
Varied recipes for the side dish existed, though Doctor Leonard McCoy was fond of his generations-old family recipe. It got its name from being too fluffy to be sliced, so it was eaten with a spoon. It was made with milk, salt, sugar, cornmeal, sour cream, eggs, and baking powder, and served with butter.
In the 2260s decade, he passed along the recipe to Nurse Christine Chapel, who adapted the dish to be served by the USS Enterprise's food processors. (TOS reference: Official Cooking Manual)
