Colcannon was a type of potato cabbage casserole popular in Scotland in the 23rd century.

History and specifics

The traditional Scottish recipe featured minced, boiled cabbage and an equal portion of mashed potatoes. Butter and meat drippings were added, with grated cheddar cheese and more butter sometimes sprinkled on top.

In the 2260s decade, Montgomery Scott gave Nurse Christine Chapel a personal recipe for colcannon which she considered fancier than the traditional dish. She adapted his recipe to be served by the USS Enterprise's food processors, formulated with shredded cabbage, green onions, cheddar cheese, mashed potatoes, pepper, nutmeg, and butter.
