Brie was a type of soft cheese made by Humans. It was considered to be a very rich type of food.
History and specifics
Nyota Uhura attended a Starfleet celebration of Christmas shortly after the USS Enterprise's five-year mission ended, and one of the foods she chose from the buffet was baked Brie. She regretted having to leave the celebration so quickly when she found her crewmates, as she hadn't eaten in quite a while.
Pavel Chekov and Hikaru Sulu, who were being hunted by assassins and presumed dead, chided Uhura some time after for being able to eat so well while they faced death. (TOS - The Lost Years novel: Traitor Winds)
In 2374, Ensign Ro Laren watched Lieutenant Sam Lavelle eat several helpings of brie, Trout Almondine, okra, and cheese blintzes. (TNG - The Dominion War novel: Tunnel Through the Stars)
In 2377, not long after the Doctor experienced Seven of Nine's physical sensations, Harry Kim upgraded the Doctor's program to include tastebuds, an esophagus, and a functional stomach. His first meal was a Riesling with Brie on a baguette. However, the Doctor was unprepared for some of the less pleasant aspects of the digestive process, which in this case involved an obnoxious belch and lingering, excessive gas. He had Kim remove the upgrade after the next duty shift. (VOY reference: The Hologram's Handbook)
