Ice cream sundaes were available at the Replimat on Deep Space 9's Promenade. Jake Sisko ordered a sundae during a farewell party for Talis Cedara in the year 2370. (DS9 novel: Warchild)
In early 2378 (First Splinter timeline), after the Federation starship USS Voyager returned to the galaxy's Alpha Quadrant, Seven of Nine asked the Doctor if he would care for an ice-cream sundae. (VOY novel: Homecoming)
In one of Badgey's holodeck drills aboard the USS Cerritos in 2381, Brad Boimler was reduced in age to five years. He gleefully ordered an ice cream sundae with fudge and sprinkles from the replicator in the Cerritos bar. In a rather colorful metaphor, Captain Rayner suggested that the 3191 red directive chase mission the Discovery and Antares participated in was a sundae made not of ice cream, but of shit.
